This is one of the few pages on this site where the evidence is a single sentence and the rest is what to buy instead.

The manufacturer has answered the question directly. From the Dave's Killer Bread FAQ: "We do not currently make any gluten-free products. It's really hard to get a gluten-free bread to match our high standards for killer taste and texture (we're trying!)." That is a manufacturer statement addressing gluten, the strongest class of evidence we use, and it is a no. If Dave's launches a gluten-free line, that sentence will change and so will this page.

The panels agree. 21 Whole Grains and Seeds opens with "Organic whole wheat (organic whole wheat flour, organic cracked whole wheat)" and declares CONTAINS: Wheat. Good Seed is worse from a gluten point of view, not better: organic whole wheat, organic wheat flour, organic wheat gluten, and organic cultured wheat flour. Vital wheat gluten is added on purpose, as a functional ingredient, to hold a heavy seed loaf together. That is the opposite of an accidental trace.

"Whole grain," "organic" and "ancient grains" are not gluten claims. This is where the confusion comes from. Dave's markets sprouted grains, quinoa, millet, flax and rolled spelt, words that read like a health-food aisle, but they sit in a wheat dough. The Celiac Disease Foundation makes the point directly: products labelled wheat-free are not necessarily gluten-free, and spelt is a form of wheat. Rolled spelt appears in the 21 Whole Grains and Seeds mix. A loaf can be organic, sprouted, seeded, high-fibre and still be pure gluten.

The bars are wheat too. Dave's snack and protein bars are not a loophole, and they carry a nut-facility advisory of their own.

One thing that is genuinely useful to know: Dave's Killer Bread is a Flowers Foods brand, and so is Canyon Bakehouse, the certified gluten-free bakery in the same portfolio. If your household is buying Dave's for everyone else, the gluten-free loaf from the same parent company is sitting a few feet away.

How much risk is this?

Celiac disease: a hard no on every product, every variety, every format. This is not a cross-contact judgement call; wheat flour is the first ingredient.

Non-celiac gluten sensitivity: also no. There is no low-gluten variety here, and Good Seed has added gluten.

Wheat allergy: no. CONTAINS: Wheat is declared on the packaging.

Where people actually get caught: being served "the healthy brown bread" at a café or a friend's house on the assumption that whole-grain means gluten-free. Restaurants make this mistake with seeded artisan loaves constantly. If someone offers you Dave's because it looks wholesome, the answer is no.

One reassurance: Dave's does declare wheat clearly and does not hide behind vague terms, so a label check takes two seconds. Its bread, bagels, buns and English muffins are also made without peanuts or tree nuts and not in a facility that handles them, which matters if gluten is not your only issue.

What to have instead

This is the part worth your time. Gluten-free bread has improved enormously, and the good ones are now in ordinary supermarkets.

  • Canyon Bakehouse
    The closest thing to a like-for-like swap, and the one to start with. Certified Gluten Free through GFCO, baked in a dedicated gluten-free facility, their FAQ's framing is "the best way to ensure that gluten is not in our products is to make sure it does not enter our building", and their oats come from suppliers on the gluten-free oat purity protocol, third-party inspected. Their 100% whole-grain and heritage-style loaves are the nearest match to what a Dave's buyer actually wants: seeds, structure, a slice that holds a sandwich.
  • Schär
    Europe's largest gluten-free brand, made in a dedicated US facility and the most widely stocked. Artisan Baker White and Multigrain are shelf-stable until opened, which is unusual and genuinely convenient. The Multigrain contains soy; the range is large, so read the specific pack.
  • Franz Gluten Free
    "Our bread is more than just gluten free. Our recipes are free from wheat, soy, nuts, dairy, and high fructose corn syrup." Strong in the Pacific Northwest, sold nationally online, and the reduced-oxygen packaging means it keeps on the counter rather than living in your freezer. Mountain White, Seven Grain, Great Seed and Hawaiian, plus buns.
  • Base Culture
    Grain-free rather than just gluten-free, the Original Keto Bread is water, eggs, almond butter, golden flaxseed meal, arrowroot, psyllium, almond flour, cider vinegar, sea salt and baking soda, labelled Grain Free • Gluten Free. Dense, high-protein, freezer aisle. Two cautions: Base Culture no longer fulfils its own e-commerce orders, so use the store locator; and the brand now also sells a wheat-based sourdough line, so buy from the frozen gluten-free range and read the pack.

Buying rules that save you money. Gluten-free bread is best judged toasted, almost all of it is transformed by a toaster and mediocre straight from the bag. Buy one loaf of two or three brands before committing to a favourite; texture preference in this category is unusually personal. And check the freezer aisle, not just the bread aisle: several of the best loaves are sold frozen.

Is Dave's Killer Bread Good Seed gluten-free? No, and it is the worst candidate in the range. Its panel lists organic whole wheat, organic wheat flour, organic wheat gluten and organic cultured wheat flour, with CONTAINS: Wheat declared.

Is Dave's Killer Bread 21 Whole Grains and Seeds gluten-free? No. Organic whole wheat is the first ingredient and the mix includes rolled spelt, which is a wheat.

Does Dave's Killer Bread have a gluten-free line coming? Nothing has launched. Their FAQ says they are trying but that the taste and texture bar has not been met. Treat "coming soon" as "not yet" until a certified product is on a shelf.

Is sprouted or whole-grain bread lower in gluten? No. Sprouting changes starch and some nutrient availability; it does not remove gluten. Nor does organic, sourdough fermentation, or ancient grains: spelt, kamut, einkorn, farro, rye and barley are all off the list.

Are Dave's Killer Bread bars gluten-free? No. The snack and protein bars contain wheat, and they also carry almond, peanut and tree-nut facility warnings.

Is Canyon Bakehouse made by the same company as Dave's Killer Bread? Yes. Both are Flowers Foods brands. Canyon is the certified gluten-free one, baked in a separate dedicated facility. Same parent company, opposite answer.
